Butternut Soup

If I can pick one vegetable that I had the most success with this year it would be butternut. The vines completely took over my office garden and chocked out anything else I had growing there. There was however an upside, I was able to harvest an abundance of butternut, 17 so far and there are still some on the vine.

Butternut takeover:

 Butternuts curing on the windowsill of my kitchen. I love the comments when people walk by and I mention that I grew them myself.

 A simple, yet delicious butternut soup:

1 large butternut
1 cup cream
1 cup chicken stock
salt and pepper to taste
Any herbs you like
Feta, whipped cream, and coriander to garnish

Steam butternut till soft.
Use a stick blender to mix butternut, cream, chicken stock and herbs.
If it is too thick for your liking keep adding cream, milk or stock until you get your desired consistancy.
Reheat before serving.
Garnish with whipped cream, lots of feta and coriander (also from my garden)

    Your Butternut squash takeover looks like what happened to my cucumbers one year. I did not realize they were so aggressive!

  2. Oh your vines look fantastic and 17 pumpkins !!
    We had very low rainfain this summer so my vines sort of limped along but I do have 8 butternuts which are outside curing in the sun, will have to bring them inside soon. Looking forward to making some fresh pumpkin soup.Happy Gardening.
